Marinated Chicken with Peppers and Marjoram
15 minutes preparation time, plus 30 minutes marinating time. Serves 2
Ingredients
2 Chicken breast fillets skinned
1 garlic clove skinned and crushed
0 mls or 2 teaspoons lemon juice
A pinch of sugar
45 mls or 3 tablespoon of vegetable or olive oil
15 mls or 1 tablespoon of freshly chopped marjoram or, 5 mls or 1 teaspoon of dried marjoram
1 small onion skinned and sliced in to rings
Salt and pepper
1 small red pepper cored, seeded and coarsely chopped
1 small yellow pepper cored, seeded and coarsely chopped
50 grams or 2 ounces olives halved and stoned
15 mls or 1 tablespoon of capers
Fresh marjoram to garnish
Method:
- Cut the chicken in half width ways and place in a shallow dish.
- Put the garlic, lemon juice and sugar in to a small bowl and whisk together.
- Gradually whisk in the oil.
- Stir in the marjoram, onion rings, salt and pepper.
- Pour over the chicken and leave to marinate for at least 30 minutes.
- Meanwhile, put the peppers in to a small dish with 30 mls or 2 tablespoons of water. Cover and cook on high for 5/6 minutes or until the peppers are just soft. Drain and set aside.
- To cook the chicken, cover and cook on high for 5/6 minutes or until the chicken is tender, turning once.
- Add the peppers, olives and capers, cook on high for 1/2 minutes or until heated through stirring once.
- Serve immediately garnished with fresh marjoram.
