Quick and Easy Recipes

Marinated Chicken with Peppers and Marjoram

15 minutes preparation time, plus 30 minutes marinating time. Serves 2

Ingredients

2 Chicken breast fillets skinned
1 garlic clove skinned and crushed
0 mls or 2 teaspoons lemon juice
A pinch of sugar
45 mls or 3 tablespoon of vegetable or olive oil
15 mls or 1 tablespoon of freshly chopped marjoram or, 5 mls or 1 teaspoon of dried marjoram
1 small onion skinned and sliced in to rings
Salt and pepper
1 small red pepper cored, seeded and coarsely chopped
1 small yellow pepper cored, seeded and coarsely chopped
50 grams or 2 ounces olives halved and stoned
15 mls or 1 tablespoon of capers
Fresh marjoram to garnish

Method:

  1. Cut the chicken in half width ways and place in a shallow dish.
  2. Put the garlic, lemon juice and sugar in to a small bowl and whisk together.
  3. Gradually whisk in the oil.
  4. Stir in the marjoram, onion rings, salt and pepper.
  5. Pour over the chicken and leave to marinate for at least 30 minutes.
  6. Meanwhile, put the peppers in to a small dish with 30 mls or 2 tablespoons of water. Cover and cook on high for 5/6 minutes or until the peppers are just soft. Drain and set aside.
  7. To cook the chicken, cover and cook on high for 5/6 minutes or until the chicken is tender, turning once.
  8. Add the peppers, olives and capers, cook on high for 1/2 minutes or until heated through stirring once.
  9. Serve immediately garnished with fresh marjoram.
