Quick and Easy Recipes
SWEET AND SOUR LAMB. Serves 4
500g 1.lb lamb neck fillet, thinly sliced
2 tablespoons olive oil/knob of butter
1 onion sliced
2 sticks of celery, sliced
2 carrots, peeled and cut into sticks 50g, 2oz frozen diced peppers 225g, 8oz canned pineapple chunks
3 teaspoons cornflour
3 tablespoons of orange juice
2 tablespoons of lemon juice
2 tablespoons tomato ketchup/puree
1 tablespoon soy sauce
100g-4oz frozen button mushrooms quartered
salt and pepper
1/4 teaspoon ground coriander
Knob of butter
Clove of garlic
1. Fry carrots, onion and garlic in knob of butter for 2 mins on high and then stir. Fry for further two mins.
2. Add lamb and coriander, and cover. Cook for 2 mins on high, stir and cook for further 2 minutes.
3. Now add remaining ingredients and stir. Cover and cook for 2 mins on full power, stir and cook again for 2 mins.
